Maple Syrup Making

Sap boiling in pot over fire

Learn how to turn maple sap into maple syrup

In 2019, when Amma last visited the Amma Canada Centre, she encouraged us to try making maple syrup. Since then volunteers have identified some of the maple trees on the property and tapped them, collecting many litres of clear, slightly sweet maple sap. They boiled the sap for hours in large pots over outdoor fires. Once the sap had reduced to a manageable volume, it was moved into the kitchen and strained to remove any debris. The final boil down of the strained sap into maple syrup was done in the kitchen the gas burners, yielding sweet, golden brown deliciousness.

This year, the Farm Team invites you to join in the maple sugaring process this March: help us collect and strain the sap, and keep the fires burning as we render down 40-50 litres of sap into one litre of syrup. Maple sugaring is a wonderful way to spend time with family in nature by the fire, and a sure sign that spring is just around the corner! Maple sugaring is very weather dependent. Exact dates and times will be shared once they are set. If you would like to participate, please contact Mohan Sookdeo or email ammatoronto@ammagroups.org
